About Legumes

Legumes are among the most beneficial crops to include in your vegetable garden. Rich in plant protein, they are easily preserved when dried and naturally enrich the soil with nitrogen thanks to their root nodules, thus reducing the need for fertilizer. Peas are among the first crops to be planted each spring—they tolerate cold and are sown as soon as the soil can be worked, sometimes as early as April in the Eastern Townships. Beans, which are more sensitive to frost, are sown directly after the last frost, once the soil has warmed to 15°C (59°F). For a staggered harvest, sow seeds every two weeks. Climbing beans require simple support—trellises, bamboo, or string—and produce abundantly over a long period.
